Ingredients

  • 20 g delicate oat flakes (locally sourced)
  • 400 ml water
  • 75 g crushed golden flaxseed
  • 1 apple
  • 4 plums
  • 2 tbsp hazelnuts
  • 3 tbsp thick apple syrup (locally sourced)

Instructions

    Pour water over oat flakes, let sit for 5 minutes, then blend with a stick blender. Mix the oat mixture with flaxseed and refrigerate for at least 12 hours, preferably overnight, to allow it to swell.

    On the next day, peel, wash, and dice the apple. Wash, halve, pit, and cube the plums. Roughly chop the hazelnuts. In a hot pan, sauté the apple, plum, and nuts over medium heat for 2 minutes, add 2 tbsp apple syrup, and caramelize for another 3 minutes.

    Stir the flaxseed pudding with the remaining apple syrup. Divide the pudding into four bowls, top each with the plum‑apple mix.
