Ingredients

  • 120 g puff pastry
  • 150 g raspberries
  • 1 EL lemon juice
  • 1 EL honey
  • 240 g goat cheese from the block (4 slices)

Instructions

    Preheat oven to 220°C with fan and top heat.

    Cut 4 circles (~8 cm diameter) from puff pastry, place on parchment-lined tray. Prick all but a narrow edge with a fork and bake for about 15 minutes until golden brown.

    Sift the raspberries and gently mix with lemon juice and honey.

    Remove puff pastry briefly from oven, top with goat cheese and raspberries, switch oven to grill mode. Bake pufflets for about 5 minutes until golden brown on top and serve immediately.
