Gnocchi with Gorgonzola and Pears

Ingredients

  • 4 slices air‑dried ham (e.g., Serrano ham)
  • 500 g gnocchi (refrigerated section)
  • 2 tbsp olive oil
  • 125 g Gorgonzola cheese
  • 200 ml cooking cream
  • 50 g walnut kernels
  • 2 large firm pears (about 250 g each)
  • 4 tbsp Canadian maple syrup (e.g., AMBER rich taste)
  • Salt
  • Pepper
  • 1 tbsp chopped parsley

Instructions

    Halve the ham slices lengthwise, place between two sheets of parchment paper on a baking tray, cover with a large oven‑proof pot and bake in a preheated oven at 180 °C (convection 160 °C; gas: level 2–3) for about 15 minutes until crisp.

    Meanwhile cook the gnocchi according to package instructions, drain well and place them in a baking dish greased with 1 tbsp oil. Sprinkle crumbled Gorgonzola over the gnocchi and pour cooking cream on top.

    Coarsely chop the walnuts. Wash, core, and cut the pears into pieces. Sauté the pears in the remaining hot olive oil until browned, add the walnuts briefly, then pour in 2 tbsp maple syrup. Reduce quickly over high heat, season with salt and pepper.

    Broil the gnocchi under the oven grill for 3–5 minutes, pour the pear‑walnut mixture over them, sprinkle parsley, lay ham strips on top, and drizzle remaining maple syrup over the dish.
