Ingredients

  • 125 g glass noodles
  • 400 g zucchini
  • 125 g spring onions
  • 1 EL sesame oil
  • 3 EL soy sauce
  • 2 EL fruit vinegar
  • 2 EL lemon juice
  • 1 TL sugar
  • Salt
  • Cayenne pepper

Instructions

    Place glass noodles in a bowl. Wash zucchini, halve lengthwise and remove the soft interior. Cut zucchini lengthwise into very thin strips. Clean and wash spring onions, then cut them lengthwise into thin strips as well. Add zucchini and onions to the noodles, pour boiling water over everything, let stand for 3-4 minutes, then drain in a sieve.

    Whisk together sesame oil, soy sauce, fruit vinegar, lemon juice, sugar, salt and cayenne pepper, taste, and mix with the noodles and vegetables. Serve immediately.
