Ingredients

  • 1 l chicken broth (homemade or instant)
  • 4 celery stalks
  • 2 carrots
  • 100 g glass noodles
  • 16 pre-cooked peeled shrimp
  • 2 tbsp sesame oil
  • 2 slices ginger (1 cm thick)
  • 3 spring onions
  • 300 g pumpkin flesh (e.g., from muskmelon pumpkin)
  • 2 tbsp Light soy sauce
  • Salt
  • white pepper (ground)

Instructions

    Soak glass noodles in warm water for 10 minutes, then drain and cut into pieces about 5 cm long.

    Wash and trim spring onions, slicing them into thin rings. Wash celery stalks and slice into thin rounds (set aside the green leaves). Peel ginger and finely chop it. Peel carrots and grate finely. Dice pumpkin flesh into small cubes.
