Ingredients
- 2 orange-fleshed sweet potatoes (≈800 g)
- 2 onions
- 1 Garlic clove
- 1 piece ginger (cherry-sized)
- 1 chili pepper
- 2 tbsp olive oil
- 2 tbsp sherry vinegar
- 1 l vegetable broth (approx.)
- 100 g whipping cream
- Salt
- Pepper
- 1 tsp cinnamon
- 75 g feta cheese

Peel and dice sweet potatoes. Peel onions, garlic, ginger; deseed and wash chili; chop all ingredients. Heat oil in a pot and sauté the prepared vegetables. Deglaze with vinegar and vegetable broth. Simmer covered for about 15 minutes until potatoes are tender.

Blend soup with an immersion blender, adding cream and a splash of broth to reach desired consistency. Bring back to a boil, season with salt, pepper, and cinnamon. Ladle into bowls. Crumble feta over the soup and sprinkle with cress.
