Ingredients

  • 150 g rice noodles
  • 800 ml vegetable broth
  • 1 dried chili pepper
  • 2 kaffir lime leaves
  • 2 small Thai eggplants
  • 2 carrots
  • 1 stalk leek
  • 2 tbsp fresh chopped Thai basil
  • lime juice
  • light soy sauce

Instructions

    Cook the rice noodles according to package instructions and drain.

    Bring the broth to a boil with the dried chili pepper and kaffir lime leaves.

    Wash, trim, halve, and slice the Thai eggplants; peel, halve lengthwise, and slice the carrots.

    Wash and trim the leek, cut the green into ~5 cm strips and the white into rings, then add all vegetables to the soup and simmer gently for about 8 minutes.

    Finally stir in the basil and noodles, season with lime juice and soy sauce, and serve hot.
