Gazpacho Shooter with Parmesan Hips

- 1 red bell pepper
- 1 tomato
- 1 Shallot
- 2 cloves garlic
- 1 tsp Olive oil
- Salt
- ground pepper
- 2 tbsp gin
- 30 g fresh parmesan
- basil (for garnish)

Quarter the bell pepper, clean, rinse and dice it. Rinse the tomato, cut off the stem end and dice it. Peel and dice the shallot and garlic. Heat the olive oil. Sauté the shallot and garlic in it. Add the pepper, tomato and onion-garlic mixture to a blender and puree. Season with salt, pepper and gin. Chill well.

Thinly slice the parmesan into 5 cm circles and scatter them in a non-stick pan. Warm and brown the underside. Let cool in the pan. Carefully lift the parmesan hips from the pan with a spatula. Briefly remix the gazpacho and pour it into small shot glasses. Place the parmesan hips on the glasses and garnish with basil leaves before serving.
