Ingredients

  • 2 slices toast bread
  • 600 g ground lamb
  • 1 egg
  • semolina breadcrumbs (as needed)
  • Salt
  • ground cumin
  • 1 tbsp Sichuan peppercorns
  • 1 tbsp whole black peppercorns
  • 8 garlic cloves
  • vegetable oil (for frying)

Instructions

    Soak the toast bread in lukewarm water. Squeeze out excess liquid and add to the ground lamb. Mix in the egg and breadcrumbs as needed until a well-formed mixture results. Season with salt and cumin, then shape into 8 patties. Crush Sichuan peppercorns and whole black peppercorns in a mortar and sprinkle over the patties. Peel some garlic cloves; lightly crush the remaining ones. Fry the patties in 3–4 tbsp hot oil in a pan together with the garlic, cooking each side for 4–5 minutes over low heat.
