Garlic Lime Shrimp with Aioli

The Garlic Lime Shrimp with Aioli from Spoonsparrow transports you culinary to a Spanish vacation and is also healthy.

Ingredients

  • 1 kg raw giant shrimp
  • 8 garlic cloves
  • 2 Organic Limes
  • 5 g parsley (½ handful)
  • 2 tbsp olive oil
  • 150 ml olive oil
  • Salt
  • Pepper
  • Cayenne pepper
  • 1 egg yolk
  • 5 dill stalks

Instructions

    Wash and drain the shrimp. Peel the garlic, slice two cloves thinly; set aside the rest. Rinse limes hot, pat dry and cut into thin slices. Wash parsley, shake dry and chop leaves.

    Place shrimp in a bowl, add garlic, lime slices, half the parsley and 2 tbsp olive oil. Season with salt, pepper and a pinch of cayenne pepper.

    Transfer shrimp to an oven‑proof baking dish, spread evenly and bake in a preheated oven at 220 °C (200 °C fan; gas: level 3–4) for 15–20 minutes, turning halfway through.

    Meanwhile, puree the remaining garlic in a blender, season with salt and pepper. Mix in the egg yolk and add a little oil. Slowly whisk in the rest of the oil until smooth. Spoon the aioli into a small bowl.

    Wash dill, shake dry, trim tips and chop. Remove shrimp from oven, sprinkle with dill and remaining parsley, and serve with the aioli.
