Fruitful Spiced Rice
Savory meets sweet in this fruity spiced rice from Spoonsparrow – perfect for a quick office lunch.
Ingredients
- 1 onion
- 1 Carrot
- 4 oranges
- 1 tbsp Sesame oil
- 150 g cooked white rice
- 300 ml Vegetable broth
- 0.5 tsp ground coriander
- 0.5 tsp ground cardamom
- 0.5 tsp ground cinnamon
- Salt
- black pepper (ground)
- 2 tbsp raisins
- parsley
Instructions

Peel the onion and slice into thin strips. Peel, wash, and cut the carrot into 2 cm long, wood‑thin sticks. Juice three oranges and measure out 150 ml of juice.

Heat oil in a high‑sided pan, sauté onion and carrot while stirring. Rinse the rice, add it to the pan and cook for about 3 minutes.

Pour in vegetable broth and orange juice. Add coriander, cinnamon, cardamom, salt, and pepper; cover and simmer on low heat for about 40 minutes.

Using a sharp knife, peel the remaining orange thickly so that all white pith is removed. Separate the flesh from the skin and catch the released juice in a small bowl. Soak raisins in this orange juice.

Season the finished rice with salt and pepper. Fold in orange slices and soaked raisins; let everything rest for another 5 minutes before serving garnished with parsley.
