Fruit Tartlets
Between meals or with coffee and tea in the afternoon: The fruit tartlets from Spoonsparrow are always well received!
Ingredients
- 200 g Flour
- 80 g Butter
- 80 g powdered sugar
- 1 egg yolk
- 1 pinch salt
- 250 g double cream fresh cheese
- 1 tsp lemon juice
- 1 packet gelatin powder
- 50 g powdered sugar
- 300 g berries
- 1 fig
- 1 carambola
- 1 mango piece
- 1 Kiwi
- oil (for the mold)
- breadcrumbs (for the mold)
Instructions

Quickly knead the dough ingredients into a shortcrust pastry, shape into a ball, wrap in foil and refrigerate for 30 minutes. Grease tartlet tins well with oil, dust with breadcrumbs. Roll out the shortcrust on a floured surface, cut circles using the tins as a guide.

Press the circles into the tins, prickle them several times with a fork, and bake in a preheated oven at 180°C for 8 minutes. Whisk together cream cheese, lemon juice, gelatin powder, and powdered sugar to make a smooth filling. Remove the tartlets from the oven, let cool, then unmold.

Fill a piping bag with the cream mixture and pipe it into each tartlet. Wash berries and pat dry. Peel kiwi and slice thinly. Slice carambola, cut mango and fig into small pieces. Arrange the berries and fruit slices on top of the filled tartlets. Serve and enjoy.
