Fried Zucchini with Tomato Sauce

Ingredients
- 2 large zucchinis
- Salt
- pepper (ground)
- 4 eggs
- 1 tbsp Olive Oil
- 125 g flour
- 1 sprig mint
- 1 sprig parsley
- 0.5 tsp grated organic lemon zest
- vegetable oil (for frying)

Wash, peel, and grate the zucchini into a bowl. Season with salt and pepper. Separate the eggs; whisk the yolks with olive oil and stir into the grated zucchini. Gradually sift in flour and mix well. Wash, pat dry, and finely chop the mint and parsley leaves. Stir in lemon zest. Beat the egg whites with a pinch of salt until stiff peaks form, then fold into the batter.

Heat plenty of oil in a large pot over medium-high heat. Drop spoonfuls of the zucchini mixture into the hot oil, frying for about 4 minutes per side or until golden brown. Remove and drain on paper towels. Serve warm with tomato ketchup if desired.
