SpoonSparrow fried squid: the calamari are a poem with garlic oil!

Ingredients

  • 1 kg small calamari
  • 2 cloves garlic
  • 1 red chili pepper
  • 1 Organic lemon
  • 1 tsp fennel seeds
  • 1 tsp peppercorns
  • 4 tbsp olive oil
  • Salt

Instructions

    Wash the calamari, pat dry and lay flat. Peel and finely chop the garlic. Halve the chili lengthwise, deseed, wash and chop. Rinse the lemon hot, pat dry and grate zest finely. Squeeze juice.

    Crush fennel with pepper in a mortar, mix with 4 tbsp oil, lemon zest and juice, chili and garlic. Add to squid and stir well. Cover and refrigerate for about 2 hours.

    Remove squid from marination. Heat remaining oil in a pan. Add squid and cook with half a lemon at medium heat for 5–6 minutes. Season with salt and serve.
