Fried Shrimp in Glass Noodle Coating

Ingredients

  • 12 large shrimp (prepped for cooking)
  • 125 g rice noodles
  • 1 tsp turmeric
  • 1 tbsp soy sauce
  • Salt
  • Pepper
  • oil (for frying)
  • 2 limes
  • 4 sprigs dill

Instructions

    Heat about 1 L water with turmeric, soy sauce, salt and pepper. Add the rice noodles, remove from heat and let soak for about 3 minutes. Drain the noodles through a sieve and allow to drain. Lightly season the shrimp with salt and pepper and tightly wrap them in the noodles, place on a tray and let the noodle coating dry slightly.

    Meanwhile heat the frying fat in a pot or deep fryer to about 170°C (it is hot enough when bubbles start forming at the handle of a cooking spoon held in the oil). Gently slide each well-dried shrimp into the oil one by one, frying until golden yellow. Arrange on plates and serve immediately garnished with lime wedges and dill.
