Ingredients
- 600 g pikeperch fillet (with skin)
- Pepper
- 2 EL olive oil (20 ml)
- 1 Garlic clove
- 3 thyme sprigs
- 1 TL butter
- Fleur de sel
Instructions

Wash the pikeperch fillets, pat dry and cut into 4 equal pieces. Score the skin side with a sharp knife several times so it does not curl when frying. Season the fish pieces with pepper.

Heat oil in a pan. Fry the fish on the skin side over medium heat for 3–4 minutes.

Meanwhile peel and crush the garlic. Wash and shake off the thyme.

When the flesh starts to turn white at the edges, carefully flip the fillets. Add the garlic, thyme and butter. Remove the pan from the stove and let the fillets rest for 1–2 minutes to finish cooking.

Remove the fried pikeperch from the pan, season with fleur de sel and serve with lemon wedges if desired.
