Ingredients
- 800 g fresh spinach
- Salt
- 3 spring onions
- 1 Garlic clove
- 3 tbsp olive oil
- Salt
- Pepper (freshly ground)
- nutmeg
- 2 tsp butter
- 4 eggs
- Sweet Paprika Powder

Wash, trim and clean the spinach, then collapse it in boiling salted water. Remove, shock with cold water, and squeeze dry.

Wash and slice spring onions into rings. Peel and finely chop garlic. Heat olive oil in a pot. Add spring onions and garlic and sauté for 2 minutes over medium heat. Add spinach and stir for 1 minute over medium heat, seasoning with salt, pepper, and nutmeg.

Heat butter in a large pan, crack the eggs into it, and fry them to your liking. Season with salt, pepper, and paprika powder. Arrange the spinach on plates, place one fried egg on top of each, and serve immediately.
