Ingredients

  • 21 g yeast (0.5 cube)
  • 400 g flour
  • 0.5 tsp Sea Salt
  • 4 tbsp olive oil
  • 0.5 tsp anise (ground)
  • 40 g chopped pine nuts
  • flour (for the work surface)
  • olive oil (for brushing)

Instructions

  1. 1.

Stir the yeast with about 200 ml lukewarm water. Mix the flour and salt in a bowl. Add the dissolved yeast and olive oil to the flour and knead with the dough hooks of an electric hand mixer into a smooth dough that no longer sticks to the bowl; adjust the water slightly if needed. Cover and let rise in a warm place for about 45 minutes until doubled.

  2. 2.

Preheat the oven to 220°C (425°F) with top and bottom heat.

  3. 3.

Knead the dough again on a floured surface, incorporating the anise and pine nuts. Shape into a large flat loaf (about 2 cm thick). Place on a baking sheet lined with parchment paper.

  4. 4.

Score the surface in a diamond pattern, brush with olive oil, and bake in the preheated oven for about 35 minutes until golden brown.
