French-Style Cheesecake

Ingredients
- 200 g Flour
- 2 tbsp sugar
- 1 pinch salt
- 110 g cold butter
- 1 egg
- 6 Eggs
- 500 g goat quark (or cream cheese)
- 150 g sugar
- 100 ml milk
- 0.5 untreated lemon (juice and zest)
- 60 g flour
- fat (for the pan)
- powdered sugar (for dusting)

Sift the flour onto a work surface, mix with salt and sugar, then press a well into the center of the flour. Cut the cold butter into small pieces and distribute around the well; crack an egg into the center and use a knife to cut through all ingredients until small dough crumbs form. Quickly knead the mixture by hand into a dough, shape it into a ball, wrap in cling film and chill for about 30 minutes.

Separate the eggs for the filling. Sift the quark and mix with yolks, half of the sugar, milk, lemon juice and zest. Sift in the flour and stir again. Whisk the egg whites very stiff, letting the remaining sugar drip through. Continue beating until the mixture is glossy and firm to the touch. Fold about a quarter of the meringue into the quark mixture with a spatula, then gently fold in the rest.

Roll out the dough on a floured surface. Grease a springform pan and press the dough onto the bottom of the pan; pour in the cheese filling, smooth it out and bake in a preheated oven for 45-50 minutes. Let it rest in an turned-off oven for about 10 minutes. Remove, cool completely and release from the pan. Dust with powdered sugar before serving.
