French Stew with Beans and Ham Hock (Cassoulet)

Ingredients
- 300 g white beans (dried)
- 2 onions
- 2 cloves of garlic? Wait original 2 Nelken = cloves of pepper? Actually Nelke is clove spice. We'll translate as "2 cloves"
- 1 bay leaf
- 2 carrots
- 4 Spring Onions
- 2 Garlic cloves
- 1 small ham hock
- 2 sprigs Rosemary
- 100 g black olives
- Salt
- black pepper (from grinder)

Soak beans overnight.

Peel one onion, pierce with cloves and bay leaf. Add to pot with beans and washed ham hock, cover with water and simmer covered for about 1.5 hours. If needed add more water and skim off foam.

Meanwhile peel garlic cloves, carrots and another onion, roughly dice them. Wash spring onions, trim and cut into pieces. About 30 minutes before cooking add everything with rosemary sprigs and olives to the pot. Finally (when beans start breaking down) remove ham hock, separate meat from bone and roughly dice it. Remove pierced onion, put meat back in and season with salt and pepper before serving.
