Four Seasons Pizza (Quattro Stagioni)

Enjoy a lovely evening with the Four Seasons Pizza (Quattro Stagioni) from Spoonsparrow!

Ingredients

  • 250 g spelt flour Type 1050
  • 20 g yeast
  • 125 ml lukewarm water
  • 4 tbsp olive oil
  • Salt
  • 250 g pizza tomatoes
  • 1 tbsp tomato purée
  • 1 tsp Dried Italian herbs
  • 150 g mozzarella
  • 20 g porcini mushrooms (canned)
  • 150 g artichoke hearts (canned)
  • 100 g turkey ham
  • 100 g mixed olives (canned)
  • 50 g anchovy fillets in oil
  • 2 tsp capers
  • Pepper
  • a handful basil

Instructions

    Sift the flour into a bowl, make a well in the center. Crumble the yeast into some water, pour it into the well, dust with flour and cover for 15 minutes to rise. Add the remaining water with salt and 2 tbsp olive oil and knead everything into a smooth dough. Cover and let rise in a warm place for 1 hour.

    Heat 1 tbsp olive oil in a pot, peel and press garlic, add pizza tomatoes and tomato purée, season with herbs, salt and pepper.
