Focaccia with Anchovies and Olives

Ingredients
- 21 g yeast (0.5 cube)
- 400 g flour
- 0.5 tsp Salt
- 50 ml olive oil
- 1 tbsp freshly chopped rosemary
- 40 g small sardine fillets (in salt)
- 40 g black olives (pitted)
- 2 tbsp olive oil
- olive oil (for the baking sheet)
- flour (for the work surface)
- coarse Sea salt
Instructions

Mix the yeast with 200 ml lukewarm water. Combine the flour and salt in a bowl. Add the dissolved yeast and olive oil to the flour and knead into a smooth dough using the paddle attachment of an electric hand mixer. Cover and let rise in a warm place for about 45 minutes.

Preheat the oven to 200°C fan.

On a floured work surface, knead the dough again, fold in the rosemary, roll into a square loaf (about 30 x 30 cm) and cut into nine small squares. Place on a greased baking sheet, brush with olive oil, sprinkle with coarse sea salt, and top with sardines and olives. Cover and let rise for another 15 minutes. Then bake in the preheated oven for about 30 minutes.
