The Flammkuchen with red cabbage and apples from Spoonsparrow is simple authentic soul food.
Ingredients
- 0.5 cube fresh yeast
- 1.5 tsp honey
- 125 g spelt whole‑grain flour
- 2 tbsp olive oil
- Salt
- 350 g red cabbage (1 piece)
- 50 g turkey ham
- 1 red apple
- 1 tbsp Lemon Juice
- 1 onion
- 120 g sour cream
- Pepper
- 3 sprigs thyme

Dissolve yeast and ½ tsp honey in 50 ml lukewarm water. Add the mixture to the flour, knead well, cover and let rise in a warm place for 30 minutes. Then fold in oil and a pinch of salt, cover again and allow to rise for another 45 minutes.

Meanwhile clean, wash and finely slice the red cabbage. Dice the turkey ham very finely. Wash the apple, quarter it, core it, thinly slice it and drizzle with lemon juice. Peel the onion and cut into fine rings. Mix the sour cream with the remaining honey, season with salt and pepper. Rinse the thyme, pat dry, remove leaves from stems.
