Fish Quiche

Ingredients

  • 200 g Flour
  • 1 tsp salt
  • 100 g butter
  • 1 egg yolk
  • soft butter (for the pan)

  • 1 onion
  • 2 Garlic cloves
  • 2 tbsp plant oil
  • 700 g smoked snoek (alternatively smoked trout)
  • 3 eggs
  • 200 ml whipping cream
  • 50 g grated cheese (e.g., Gouda)
  • Salt
  • Pepper
  • nutmeg
  • a pinch of chili flakes

Instructions

    Mix the flour with the salt. Add butter in pieces, add the egg yolk and knead with 1-2 tbsp cold water into a smooth dough. Wrap in foil and chill for about 30 minutes.

    Preheat the oven to 200°C (400°F) with upper and lower heat. Butter the tart pan and dust it with flour.

    Peel and finely chop the onion and garlic. Sauté them in hot oil until translucent, then remove from heat. Cut the snoek into small pieces and add to the onion mixture. Whisk the eggs with cream and cheese, seasoning heavily with salt, pepper, nutmeg, and chili.

    Roll out the dough on a floured surface to fit the pan, place it inside and press down. Spread the onion-fish mixture over it and pour the egg-cream mixture on top. Bake in the middle of the oven for about 50 minutes until golden brown.
