Ingredients

  • 500 g white fish fillet (e.g., cod, haddock)
  • 2 Eggs
  • 1 onion
  • 1 tbsp finely chopped herbs (parsley, dill)
  • 80 g breadcrumbs
  • Salt
  • Pepper (freshly ground)
  • a pinch nutmeg (freshly grated)
  • vegetable oil (for frying)
  • 700 g potatoes
  • 80 g pickled cucumbers
  • 50 g onions
  • 0.5 cup warm meat broth
  • Salt
  • Pepper (freshly ground)
  • 250 g mayonnaise
  • 1 tbsp finely sliced chives

Instructions

    Process the fish fillets through a fine-mesh grinder. In a bowl, combine with eggs, peeled and finely chopped onion, herbs, breadcrumbs, salt, pepper, and nutmeg to form a dough; refrigerate.

    Wash potatoes, boil in skins, peel, and slice thinly when cooled. Place in a bowl. Dice pickled cucumbers and onions, add to potatoes. Pour warm meat broth over the mixture. Season with salt and pepper. Gently fold in mayonnaise and let the salad rest for 30 minutes. Taste again and sprinkle with chives.

    Shape the fish dough into ~50 g patties and flatten slightly. Heat 2-3 tbsp oil in a pan and fry patties 4-5 minutes per side. Plate on bowls with potato salad, garnish with dill, and serve.
