Ingredients

  • 4 large tomatoes
  • 1 onion
  • 1 Garlic clove
  • 2 tbsp oil
  • 1 can small kidney beans (240 g)
  • corn kernels
  • 1 tbsp Tomato Paste
  • 5 tbsp ketchup
  • salt (ground)
  • pepper (ground)
  • chili powder
  • 50 g lamb's lettuce
  • 8 taco shells

Instructions

    Score tomatoes crosswise, blanch in boiling water for 1 minute, cool and peel. Cut into pieces.

    Peel onion and garlic; dice them.

    Heat oil. Sauté onion and garlic until translucent. Add tomatoes and simmer 1-2 minutes. Drain beans and corn. Mix with tomatoes. Stir in tomato paste and ketchup; let simmer 2-3 minutes. Season with salt, pepper, and chili powder.

    Rinse and clean lamb's lettuce. Fill taco shells with bean-corn mixture and lettuce.
