Filled Potato with Swiss Chard and Cheese

Ingredients

  • 800 g medium-sized potatoes (starchy)
  • 2 Swiss chard leaves
  • 1 tbsp butter
  • oil (for the tray)
  • Salt
  • Nutmeg (freshly grated)
  • pepper (ground)
  • 120 g shredded Emmental cheese
  • 12 spinach leaves (for garnish)

Instructions

    Wash the potatoes and cook them as boiled potatoes. Drain, let them cool completely, and refrigerate for about 2 hours. In the meantime, wash the Swiss chard and cut it into thin strips.

    Preheat the oven to 180°C fan. Cut the potatoes in half, carefully scoop out the flesh, and place the halves on a greased baking tray with the cut side up. Mash the scooped potato pieces with a fork. Heat the butter in a pan and sauté the Swiss chard strips while stirring until they wilt. Mix the chard into the mash, season with salt, nutmeg, and pepper.

    Fill the potato halves with the Swiss chard mash and sprinkle with cheese. Bake in the oven for about 15-20 minutes until golden. Plate and garnish with baby spinach leaves.
