Ingredients

  • 2 Eggs
  • 1 pinch salt
  • 50 g sugar
  • 2 tbsp eggnog
  • 60 g flour
  • 40 g cornstarch
  • 100 g chocolate glaze
  • 160 g chocolate
  • 40 g Butter
  • 80 ml eggnog

Instructions

    Beat the eggs, salt and sugar with a whisk or hand mixer until fluffy, so that the mixture quadruples in volume. Stir in the eggnog. Mix the flour with the cornstarch and baking powder, then gently fold into the egg mixture.

    Line a baking sheet with parchment paper. Fill a piping bag with the dough and pipe teaspoon-sized mounds onto the sheet.

    Bake in a preheated oven at 180°C (350°F) for about 10 minutes, then cool on a wire rack.

    Prepare the chocolate glaze according to package instructions and brush it onto the bottom of the cookies.

    Break the white chocolate into small pieces, combine with butter and eggnog over a double boiler until smooth. Chill for at least one hour. Then beat with a hand mixer until airy. Pipe half of the filling onto the cookies, top with the remaining filling, and let set.
