Ingredients
- 4 beef filet steaks (200 g each)
- coarsely ground pepper
- 2 tsp clarified butter
- 1 egg
- Salt
- pepper (from grinder)
- 3 tbsp coarse mustard
- 2 tbsp breadcrumbs
Instructions

Season the steaks with pepper and sear in hot clarified butter for about 2 minutes per side, then salt.

Whisk the egg with salt and pepper in a bain-marie until frothy, fold in the mustard, and mix in the breadcrumbs.

Spread the paste over the steaks and bake at 200°C for 5-7 minutes.
