Fig Pizza

Ingredients
- 21 g yeast (0.5 cube)
- 0.5 tsp honey
- 400 g spelt whole‑grain flour (plus extra for dusting)
- 4 tbsp olive oil
- Salt
- 8 figs
- 200 g hard cheese such as Pecorino
- 1 handful Arugula

Crumble the yeast into a bowl, stir in honey and 190 ml lukewarm water until smooth. Add the flour, olive oil and 1 tsp salt, then knead into a supple dough. Adjust flour or water as needed. Cover and let rise in a warm place for about an hour.

Wash the figs and cut them into strips. Grate the cheese.

On a floured surface, knead the dough again, divide it into four portions and roll each into a thin oval. Place on parchment paper, sprinkle with grated cheese, top with fig strips, then carefully transfer to a hot baking tray. Bake in a preheated oven at 240 °C (220 °C fan or gas high setting) for 10–15 minutes until golden brown.

Meanwhile wash and dry the arugula. Remove the pizzas from the oven, scatter arugula over them, and serve immediately.
