Fettuccine with Tomato Sauce

Ingredients
- 500 g Fettuccine
- 2 cans peeled tomatoes (250 g each)
- Salt
- Pepper (freshly ground)
- Grated nutmeg
- olive oil
- 1 large onion (finely chopped)
- 3 garlic cloves (peeled and halved)
- sugar
- butter
- a handful of fresh basil

Drain the tomatoes, reserving the juice. Chop them finely. Heat 3 tbsp olive oil in a pan and sauté the onion until translucent. Add the tomatoes and garlic, then pour in the reserved juice and bring to a boil. Simmer on low heat for 5-8 minutes, stirring occasionally, until the sauce thickens slightly. Remove from heat and season with salt, pepper, nutmeg, and 2 tsp sugar. Stir in 1 tbsp butter and set aside.

Cook the pasta in plenty of salted water until al dente. Reserve one cup of cooking water, then drain the noodles. Add them to the pan with the sauce, return to the stove, and stir quickly over high heat. Fold in basil and serve immediately while still firm. Sprinkle grated Pecorino or Parmesan on top if desired.
