Ingredients

  • 2 yellow zucchinis
  • Salt
  • 1 Garlic clove
  • 250 g sheep cheese
  • 250 g ricotta
  • 1 egg yolk
  • 2 Tbsp grated Parmesan
  • 2 tbsp freshly chopped thyme
  • Salt
  • Pepper (freshly ground)
  • 200 ml vegetable broth
  • 120 g shredded mozzarella

Instructions

    Wash, trim and slice the zucchini lengthwise into 2-3 mm thick slices or half-moons. Blanch briefly in salted water, shock in cold water and pat dry.

    Peel and finely grate the garlic with a pinch of salt. Drain the feta and mash it with a fork. Mix the feta, well-drained ricotta, egg yolk, thyme, salt and pepper until smooth.

    Preheat the oven to 200°C fan.

    Spread each zucchini slice on a work surface and spread the ricotta mixture over it. Roll up and place in a baking dish. Pour a little broth over the rolls and sprinkle with mozzarella. Bake for about 25 minutes until golden brown, adding more broth if needed.
