Fennel-Strawberry Salad with Lime and Lemon Balm

A successful mix of fennel, strawberry salad with lime and lemon balm from Spoonsparrow.
Ingredients
- 2 limes
- 200 g strawberries
- 2 bulbs fennel (with greens)
- 1 tsp white wine vinegar
- Salt
- Pepper
- 1 tsp Mustard
- 4 tbsp germination oil
- 2 sprigs Mint
- edible flowers (optional)
Instructions

Peel the limes thoroughly, remove the flesh and catch the juice. Wash, clean and halve the strawberries.

Wash, clean, quarter the fennel, trim the tough stems and shave into fine strips; set aside the fennel greens.

Whisk lime juice with vinegar, salt, pepper, mustard and oil. Toss the lime slices and fennel strips in this dressing.

Wash mint, pat dry, pluck leaves. Arrange fennel strips on four plates, top with strawberries, mint and fennel greens. Garnish with edible flowers if desired.
