Ingredients

  • 1 Fricandeau of venison (false fillet) ca. 600 g
  • 140 g smoked ham (slices)
  • 2 tbsp liquid butter
  • pepper (ground)
  • coarse Sea salt

Instructions

    Remove any tendons from the meat if necessary and wrap with bacon slices. Tie firmly with kitchen twine. Preheat the oven to 180°C (350°F) fan‑forced.

    Place the roast in a baking dish, brush with butter and season with pepper. Bake for about 40 minutes depending on thickness until the meat feels firm but not hard when pressed lightly with fingers.

    For serving, salt, remove the twine and slice into rounds.
