Exotic Chicken Salad with Peanuts

Ingredients
- 2 stalks leek (white part only)
- 1 Carrot
- 1 red bell pepper
- 50 g peanuts
- 2 tbsp mint (coarsely chopped)
- 0.5 cucumber
- 1 lemongrass stalk
- 1 Red Onion
- 2 tbsp peanut paste
- 2 tbsp coconut cream
- juice of one lime
- Salt
- Cayenne pepper
Instructions

Steam chicken breasts in a bamboo steamer or steaming basket for about 20 minutes, adding a lemongrass stick to the steam water. After steaming, finely shred or chop the chicken and mix it while still warm with peanut paste, coconut cream, lime juice, salt, and cayenne pepper. Cover and let rest for 1 hour.

While the chicken rests, peel and halve the onion, then slice into thin strips.

Wash the cucumber, cut lengthwise in half, and slice into thin rounds.

Wash the bell pepper, halve it, remove seeds, and dice.

Peel the carrot and finely julienne it.

Wash the leek, trim ends, and slice into very fine rings.

Toast the peanuts in a dry pan over medium heat until fragrant. Remove from heat and let cool.

Combine the chicken with all remaining ingredients and season to taste.

Serve on banana flower petals if desired.
