Ingredients

  • 200 g shallots
  • 1 Garlic clove
  • 4 slices entrecôte (about 3 cm thick)
  • 2 tbsp oil
  • Salt
  • freshly ground pepper
  • 50 g butter
  • 250 ml red wine
  • 50 ml red port wine

Instructions

    Preheat oven to 50°C. Peel and cut shallots into strips. Peel garlic.

    Pat entrecôte dry. Heat oil and sear each side of the steak for 2 minutes. Season with salt and pepper. Spread 25 g butter slices over the meat. Cover pan and place in oven for about 18‑20 minutes to keep warm.

    Heat remaining butter. Sauté shallots in it. Add pressed garlic. Gradually pour in red wine and port wine, letting it reduce.

    Remove steak from oven and slice. Serve with the red wine shallots.
