Ingredients

  • 2 handfuls elderflowers
  • 1 untreated lemon
  • 500 g sugar
  • 10 g citric acid (pharmacy)

Instructions

    Do not wash the elderflowers, just shake them out of their container. Rinse the lemon under hot water and slice it thinly.

    In a pot, slowly bring 1 l of water to a boil while stirring in the sugar. Let simmer for about 10 minutes, then allow to cool. Add the elderflowers and lemon slices, transfer to a large pot or similar vessel, cover, and let steep for approximately two days.

    Before bottling, strain through a cheesecloth and reheat with citric acid while stirring. Pour into prepared bottles, seal tightly, and store.
