Ingredients
- 8 elderflower buds
- 2 lemons (juice)
- 1 untreated lemon (juice and zest)
- 800 ml unsweetened apple juice
- 500 g gelatin sugar (2:1)

Wash the elderflowers gently and briefly under running water, then drain. Squeeze all lemons and cut a piece of zest from the untreated lemon. Bring the apple and lemon juices with the lemon zest to a boil.

Add the elderflowers, let cool, and refrigerate for 3 hours or preferably overnight. Then strain through a cloth, catch the juice, and measure out 800 ml.

Combine the elderflower juice with the gelatin sugar in a pot, stir, and bring to a boil. Simmer bubbling for about 4 minutes. Perform a gel test, fill sterilized canning jars, leave them upside down for about 5 minutes, then turn right-side-up and let cool.
