Ingredients
- 4 eggs
- 1 Shallot
- 100 g zucchini
- 4 radishes
- 1 sprig lemon balm
- 2 tbsp Apple cider vinegar
- 2 tbsp olive oil
- Salt
- Pepper

Peel and finely dice the shallot, then mix with vinegar and oil. Wash, trim, and grate the zucchini and radishes finely. Rinse the lemon balm, shake dry, and chop.

Combine all ingredients and let sit briefly. Meanwhile, poach the eggs to a soft set, shock in cold water, peel, and place together with the vinaigrette into four glasses.
