Ingredients

  • 600 g potatoes (starchy, salted)
  • 1 large onion
  • 3 tbsp butter
  • 140 g flour
  • 1 egg

    Peel and quarter the potatoes; cover with salted water and simmer over medium heat for about 15 minutes. Meanwhile, peel and finely chop the onion. Heat 2 tablespoons of butter in a pot, sauté the onions over medium heat until golden, then set aside covered to keep warm. Drain the potatoes and mash them through a potato masher into a bowl. Mix in the remaining butter, flour, and egg until a pliable dough forms; season with salt.

    Shape the potato dough into finger-thick noodles. Bring a large pot of salted water to a boil, reduce heat, and drop the noodles into the water. Cook uncovered over low heat for about 15 minutes until tender. Drain the noodles and serve them on plates topped with the sautéed onions.
