Ingredients
- 1 lamb leg (about 1.6 kg)
- Sea salt
- freshly ground pepper
- 6 tbsp Olive oil
- 2 Garlic cloves
- 1 lemon (juice)
- 1 tbsp freshly chopped rosemary
- 1 tbsp honey
- 1 tsp Pink peppercorns

Preheat the oven to 160°C (320°F) with both top and bottom heat.

Wash the lamb, pat it dry, and season with salt and pepper. In a pan, sear all sides in 2 tablespoons of hot oil. Add the pressed garlic cloves and deglaze with a little water. Transfer to the oven and roast for about 2 hours.

Whisk together the lemon juice with the remaining oil, rosemary, honey, and pink peppercorns. Brush this mixture over the lamb during the last 60 minutes of cooking, adding a bit more water if needed.

Serve on a bed of herbs if desired.
