Duck with Pears

Ingredients
- 1 small duck (about 1.2 kg, ready to cook)
- Salt
- black pepper (freshly ground)
- 4 small pears
- 30 g Butter
- 0.25 tsp cinnamon
- 1 Vanilla bean

Wash the duck and pat it dry. Rub salt and pepper on both sides of the bird.

Split the vanilla bean lengthwise, scrape out the seeds, and mix them thoroughly with the butter. Spread this mixture over the duck using a spatula.

Place the duck breast-side down in a roasting pan, pour about 150 ml water into the pan, and roast at 160°C for approximately 35 minutes. Flip the duck and increase the temperature to 250°C, then roast for an additional 15 minutes; baste the duck several times with the pan juices. Fifteen minutes before the end of cooking, peel the pears, place them in the roasting pan, sprinkle with cinnamon, and lightly season with salt and pepper.

Remove the finished duck from the pan and arrange it on a plate alongside the pears.
