Ingredients

  • 1 duck breast fillet (ca. 350 g)
  • clarified butter
  • 100 g shallots (peeled)
  • 0.25 l cider
  • Salt
  • Pepper (freshly ground)
  • 1 tsp mustard (coarse-grained)
  • 300 g potatoes
  • 3 tbsp oil
  • 1 tbsp sour cream
  • nutmeg
  • 50 g celeriac
  • 0.5 apple

Instructions

    Remove the skin from the duck breast, cut the meat into strips that are not too thin, and briefly sear them in hot clarified butter all over; remove and keep warm.

    Quarter the shallots and sauté them until translucent in the hot fat, pour in cider, season with salt and pepper, stir in mustard, add the duck, cover, and simmer gently for 10 minutes.

    Peel the potatoes, boil them in salted water, drain, mash with a potato masher, mix in 2 tbsp oil and sour cream to make a purée, season with salt, pepper, and a pinch of nutmeg.

    Peel and thinly slice the apple and celeriac; brown them on both sides in 2 tbsp oil, remove, and let drain on kitchen paper.

    Plate the duck with shallot sauce, potato mash, and the browned apple and celeriac slices.
