Ingredients

  • 200 g mango fruit flesh
  • 1 tbsp Peanut butter
  • 4 tbsp hot mango chutney
  • juice of ½ lime
  • Salt
  • Pepper
  • wooden skewer
  • 3 duck breast fillets (with skin, about 185 g each)
  • 3 tsp oil
  • a splash soy sauce
  • Salt

Instructions

    Dice the mango fruit flesh and blend with peanut butter, chutney, and lime juice. Season with salt and pepper.

    Soak wooden skewers in water.

    Slice the duck breast fillets lengthwise into thin strips and thread them onto the skewers in a zig‑zag pattern. Heat oil in a non‑stick pan and sear the satay skewers for 2–3 minutes on each side. Finish by spraying a few drops of soy sauce over the skewers and tossing them in the pan. Season the meat with salt and pepper. Plate the satays garnished with mango slices and mint, serving extra mango peanut sauce on the side.
