- 2 duck breast fillets (250 g each)
- Salt
- Pepper (freshly ground)
- 3 Garlic cloves
- 1 Shallot
- 1 red chili pepper
- 200 ml raspberry juice
- 150 g fresh raspberries (washed)
- Basil

Preheat the oven to 250°C (482°F) with upper and lower heat. Wash, pat dry, and season the duck breasts with salt and pepper. In a hot pan without oil, sear the duck breasts skin-side down for 5-7 minutes until golden brown, flip and cook 1-2 minutes on the other side. Remove, place on parchment-lined tray, and roast in the preheated oven for 5-6 minutes to finish pink inside. Wrap the duck breasts in foil and let rest.

Peel the garlic and shallot, slicing them thinly. Wash the chili pepper and cut into rings. In the same pan used for the duck, sauté the shallots with garlic and chili rings, then deglaze with raspberry juice. Simmer for 10-15 minutes over medium heat until reduced.

Using a slicer, cut the rested duck breasts into thin slices. Arrange the raspberry sauce on a plate, lay the sliced duck breast atop, and garnish with fresh raspberries and basil leaves before serving.
