Ingredients

  • 1 duck breast fillet (ca. 350 g)
  • Salt
  • Pepper
  • 200 g waxy potatoes
  • 2 handfuls young spinach (ca. 100 g)
  • 3 oranges
  • 2 tbsp honey
  • 2 tbsp peanut oil

Instructions

    Preheat the oven to 100°C fan.

    Wash, pat dry and score the skin of the duck breast in a diamond pattern. Season with salt and pepper and sear skin side down for about 5 minutes until browned. Flip briefly, sear other side, remove from pan and place on parchment-lined tray. Roast in the oven for 30-35 minutes to medium‑rare.

    Meanwhile wash potatoes and boil for about 15 minutes until cooked. Cool, peel and cut into strips. Wash spinach, trim and dry with a salad spinner. Peel oranges with a sharp knife and separate segments between membranes. Squeeze juice and whisk with honey and peanut oil to make dressing. Season with salt and pepper.

    Remove duck from oven and let rest briefly. Slice into rounds in a bowl and arrange on the spinach along with orange slices and potato strips. Drizzle with dressing and serve.
