Ingredients

  • 300 g duck breast fillet
  • salt, pepper
  • 100 ml Marsala (or red currant juice)
  • 250 ml duck stock
  • 200 g fresh pineapple
  • 1 bunch spring onions
  • 2 tbsp oil
  • 120 g long-grain wild rice mix

Instructions

    Remove skin from duck breast. Season with salt and pepper. In a non-stick pan sear each side. Deglaze with Marsala, then add duck stock. Simmer gently for about 15-20 minutes. Rest 3-5 minutes before slicing.

    Slice pineapple into rounds. Trim spring onions, rinse, and cut into pieces. Heat oil in a non-stick pan. Sauté pineapple slices on both sides. Add spring onions, toss briefly to keep bite. Season with a pinch of salt and cayenne pepper.

    Cook rice according to package instructions in salted water.
