Duck breast on fried pineapple

Ingredients
- 300 g duck breast fillet
- salt, pepper
- 100 ml Marsala (or red currant juice)
- 250 ml duck stock
- 200 g fresh pineapple
- 1 bunch spring onions
- 2 tbsp oil
- 120 g long-grain wild rice mix

Remove skin from duck breast. Season with salt and pepper. In a non-stick pan sear each side. Deglaze with Marsala, then add duck stock. Simmer gently for about 15-20 minutes. Rest 3-5 minutes before slicing.

Slice pineapple into rounds. Trim spring onions, rinse, and cut into pieces. Heat oil in a non-stick pan. Sauté pineapple slices on both sides. Add spring onions, toss briefly to keep bite. Season with a pinch of salt and cayenne pepper.
