Tender vanilla shortbread from Spoonsparrow: this fine crumbly pastry offers exquisite flavors of real vanilla and almonds!

Ingredients

  • 1 Vanilla bean
  • 200 g spelt flour type 630
  • 100 g powdered sugar from raw cane sugar
  • 80 g ground almonds (peeled)
  • a pinch of salt
  • 150 g butter
  • 50 g bourbon vanilla sugar

Instructions

    Split the vanilla bean lengthwise and scrape out the seeds with a knife. Sift the flour and mix it with the vanilla seeds, 75 g powdered sugar, almonds, and salt.

    Add the butter in small cubes and quickly knead everything into a smooth dough. Wrap the dough in cling film and refrigerate overnight.
