Ingredients
- 1 Vanilla bean
- 200 g spelt flour type 630
- 100 g powdered sugar from raw cane sugar
- 80 g ground almonds (peeled)
- a pinch of salt
- 150 g butter
- 50 g bourbon vanilla sugar

Split the vanilla bean lengthwise and scrape out the seeds with a knife. Sift the flour and mix it with the vanilla seeds, 75 g powdered sugar, almonds, and salt.

Add the butter in small cubes and quickly knead everything into a smooth dough. Wrap the dough in cling film and refrigerate overnight.
