Ingredients

  • 600 g beef (e.g., top sirloin)
  • 2 tbsp peanut oil
  • 250 g pineapple chunks
  • 2 tbsp green curry paste
  • 250 ml meat broth
  • 300 ml coconut milk
  • fish sauce
  • Salt
  • 200 g Sugar snap peas
  • 2 red bell pepper halves
  • 200 g Broccoli florets
  • 1 handful soy sprouts
  • a splash lime juice
  • soy sauce

Instructions

    Rinse the beef, pat dry and cut into bite-sized cubes. Brown in hot oil, then remove from pan or wok. Dice the pineapple and sauté in remaining oil for 1-2 minutes; return the beef and briefly cook with curry paste. Deglaze with broth and coconut milk. Season with fish sauce and salt, simmer gently for about 30 minutes with occasional stirring, adding more broth if needed.

    Meanwhile wash and trim the sugar snap peas. Wash the bell pepper halves, remove seeds and cut into strips. Rinse broccoli florets and soy sprouts.

    Add everything to the curry and let cook together for another 5-10 minutes.

    Season with lime juice, fish sauce and soy sauce before serving.
