Curry Rice Stuffing for Goose

Ingredients

  • 200 g Long grain rice
  • Salt
  • 1 ripe Mango
  • 150 g knollensellerie (celery root)
  • 2 onions
  • 80 g peeled walnut kernels
  • 2 tbsp olive oil
  • 3 tbsp curry powder
  • 0.5 tsp ground cinnamon
  • Cayenne pepper
  • 1 tbsp brown sugar
  • Salt

Instructions

    Cook the rice in 400 ml boiling salted water.

    Meanwhile, peel the mango, cut the flesh from the pit into 1 cm cubes and mix with lemon juice.

    Peel and dice the celery root and onions.

  4. 4.

    Toast the walnuts in a hot pan without fat until fragrant, remove, cool and roughly chop.

  5. 5.

    Sauté the onions with the celery in 2 tbsp hot oil in the walnut pan. Remove from heat, let it cool to lukewarm, then mix with the cooled rice, mango, nuts and spices and season to taste.

    Fill the prepared goose with this mixture.
